🥗 Blackeye Pea Summer Salad Recipe
🛒 What You’ll Need:

16 oz dried blackeye peas

1/4 cup diced canned jalapeños

1 small red onion, diced

3 Roma tomatoes, diced

1 green pepper, diced

1 red pepper, diced

1 tsp salt

1/2 tsp pepper

1/2 cup Wishbone Zesty Robusto Italian dressing
👨🍳 How to Make It:

Soak the blackeye peas in 4 cups of water overnight.

The next day, give them a stir and skim out any floaters.

Boil with 4 cups of water and 1 tbsp of salt for 1 to 1.5 hours, until they’re soft but still have a bite.

Rinse with cold water until completely cool.

In a big bowl, mix everything together—peas, jalapeños, tomatoes, peppers, onion, salt, pepper, and dressing.

Let it chill in the fridge for at least 4 hours (overnight is even better).
